Gordon Ramsay raves about Filipino Chef’s Sisig: Best Dish in Years

MANILA, Philippines—World-renowned chef Gordon Ramsay, famed for his blockbuster shows "MasterChef" and "Hell's Kitchen," has crowned a Filipino dish as one of the greatest he has tasted in years, hailing Filipino chef Ross Magnaye's inventive twist on sisig at Melbourne's Serai restaurant.

Ramsay expressed his enthusiasm for Serai's Taco Sisig at a Pasay City fan event. "He [Magnaye] placed crispy pig's ears, nose, and snout inside a tortilla. How exciting is that?"Ramsay praised the strong flavors and unique approach. The British chef also honored another Serai dish, a caramelized bone marrow dish flambéed with vodka, calling it "absolutely bang on" and "delicious."

Ramsay commended Serai's witty takes on traditional Filipino cuisine, describing it as a peek of "where Filipino food should be." He complimented Magnaye's use of simple ingredients to create elevated meals, honoring his history while pushing culinary limits. Ramsay also mentioned the Filipinos' fondness for sweets, comparing it to his own childhood memories of pastries prepared with evaporated milk.

For Ramsay, the best dishes aren’t just about taste—they evoke memories and tell stories. Serai’s creative take on Filipino flavors left a lasting impression, earning Ramsay’s praise and putting Filipino cuisine in the global spotlight.
